Personalised Cookies 🍪🍪🍪 1/4 Cup Caster Sugar
125g Softened Butter
1/2 Teaspoon Vanilla Essence
1 1/2 Cups Plain Flour
1/4 Cup Custard Powder
Cooking White Chocolate
Pre heat oven to 180c
With an electric mixer beat together butter, sugar & vanilla until it becomes light in colour then add the egg. Mix for another 5 minutes until combined.
Sift in flour & custard powder, mix together with a spoon until combined and
Grab some glad wrap & cover the dough and chill in the fridge I kept mine in over night & they turned out perf 🙌 rest on the bench until the dough comes back to room temp!
Roll the dough out & cut with circle cutters, place on a lined baking dish. Cook the biscuits for 12 minutes then let them cool on a wire rack (this will be the hardest part! Do not touch) 😉
With the fondant icing, sprinkle your bench with corn flour. Roll out the icing as thin as you can. Grab a smaller cutter than you used for your cookies & cut out circles.
In a small bowl add 8 squares of cooking chocolate & microwave in pulses. Zap zap zap! Until melted. Only 10 seconds at a time.
With your letter tool grab the icing circles & press gently into each circle of fondant.
